I would expect the bollato to be a document, or at least something official. The document itself and its date are expected to produce effects, or start the commencement of legal effects

Date stamped

(IE the date on which it was stamped)
The other answer (stamped document date) to my mind refers to the date of the stamped document. So the document is dated 16 Feb, it is stamped on say 20 Feb, the date of the stamped document (i.e. the document that has been stamped) is 16 Feb. But I think the term in question could mean the date on which it was stamped, which in my example would be 20 Feb.
