Actually it's either one. (To follow Radek's example, on Google the singulars lead 161,000 to 111,000. :-) Here in the U.S. it's invariably singular, probably because it's easier to pronounce. :-)
disagree Valerie Mason : The text isn't saying that these other businesses are virtual - only making a distinction between smaller IT companies and the IT departments of well-established companies (like the big consulting firms).

kamen = stone or rock, but I think might be some other word, because you used parenthesis , so I would say original firm, first firm .....
Also,I found expression: " kemenne obchody " zeji prazdnotou, jako hypermarkety a supermarkety.......so I am thinking that might be a big concrete buildings, supermarkets or hypermarkets. Not sure.

explanation follows

Kamenná firma means any company which has real offices in a building. This expression is often use in other context as "kamenný obchod" which basically means the same - real shop in a building, net a virtual shop or a stand in a market place

major companies

As I see it the distinction here is between specialist IT companies and the IT departments of large, well-established companies - the big consulting firms, banks etc. I believe "kamenna firma' is similar to 'kamenne divadlo' here (the large, well-established theatres as opposed to experimental ones).
