Anscheinend handelt es sich dabei um einen galizischen Ausdruck für "cherna", einen "Wrackbarsch", wie die folgende Website informiert:
Cherne es la voz gallega y sahariana del pez llamado cherna por casi todas nuestras costas (polyprion americanum); por nuestro mediterráneo es llamado pámpol.
Es grandote (puede llegar a pesar 40 ó 50 kg.) y su color es marrón tabaco; tiene boca y ojos muy grandes y es muy parecido al mero, por lo que en muchos sitios se le llama también meru y en Cantabria mero de roca.

You could of course say something like 'fish fumet' and not bother translating the 'de roca' bit, since it is implied.
