when sending a message from Gmail, how to make that the recipient will see the message
as high priority in his/her inbox ?

As far as I know, this is not possible. Each person customizes their own Gmail settings according to their own preferences, and this includes how Gmail determines whether a mail is high priority.

If you know that your recipient's Gmail is set up to change a message's priority to "high" whenever it contains the word "urgent", then you can add the word "urgent" to your message, but if your recipient's settings are not set up to mark messages that contain the word "urgent" as high priority, then adding the word "urgent" to your message will have no effect.

One thing you can do, is to add specific words to the subject line, e.g. "[URGENT]". This won't affect the mail's priority but it will increase the likelihood that the recipient will see the message. (Unfortunately, since this is a trick that spammers use, adding such a word may also result in the recipient thinking that your message is spam.)

Added: Another thing you can do (which is unfortunately also used by spammers) is to add emoji to the subject line. You can't add colour or fonts to the subject line, but you can add emoji. For example, you can add a red exclamation mark or a green asterisk or some similar symbol to the start of the subject line. Just be careful with assumptions: a "green" asterisk is not always green on all platforms (see here)
