I know it is "prime", but I don't quite understand what this means. Perhaps it is a French word? I think it means more than "episode", but not sure if it means something like "primer" (as in "preparation") (as it is an "academy") or something else.

Thank you for any help.

"prime"

The Wikipedia entry on the format says:
"The participants are filmed with cameras throughout the day and night (an idea borrowed from another of Endemol's major reality shows Big Brother). Once a week, the contestants have to face a prime time show, where they sing the song they've prepared during the week before, as well as recapping their trials and tribulations at The Academy from the past week."
So it would seem this is a special kind of episode. This "prime time show" is probably shortened to "prime" among insiders, as I've also seen videos titled things like "Star Academy Season 3 Prime 1" in search results.

If you'd like to make it clearer in the text, you could perhaps just call it a "live episode", as many other talent shows also have them.

It seems that you are looking for the meaning in the context. I checked several links from the program and it seems that they have many "Primes" meaning competitions to show the best. So in each "Prime" they choose the best competitors.

"Contestant Selection" Episode

Not being an avid watcher of reality shows I would assume if this is what happens during the "prime" episode then we could possibly call it that.
