In this case I'm sure it's the tank where the grapes are treaded. None the less, the wine press actually has many forms relating to traditions and processes. Since there is no specific word, I ended up with this: "there still exists a wine press built in ashlar for treading grapes, a traditional wine press with counter weight..."

Strictly speaking a lagar is a wine press, or the tank in which the grapes are pressed to make wine. More loosely, it is also a synonym of adega, which is the place where the wine making equipment is installed. Both adega, and to a lesser extent lagar, have also come to mean a place where wine can be tasted. The source text clearly refers to a building in which the wine press is housed. In this context, lagar cannot therefore mean wine press but means winery.
